Cajun Style Sea Bass or Cod

           Ingredients

4 thick cod or bass steaks
2 teaspoons dried oregano 
2 teaspoons sweet paprika  
1/2 teaspoon ground ginger 
1/2 teaspoon black pepper
1 tablespoon olive oil           

Cooking

Combine the oregano, spices and olive oil in a bowl, then coat the fish steaks by rubbing over with the mixture. Heat a large frying pan over high heat for 2 mins. Pan fry for 3 mins. on each side. If the fish looks opaque along the cut edge it's ready. If not cook for a few seconds more until it is opaque .

Crab Stuffed Flounder
           Ingredients

5 tablespoons minced onion
3 tablespoons butter  
8 oz. fresh cleaned crabmeat 
4 oz. fresh breadcrumbs 
2 oz. chopped parsley 
2 oz. heavy whipping cream  
1/4 teaspoon thyme 
1 filleted flounder 
2 fl.oz. dry white wine  
2 oz. melted butter

Cooking

 Pan fry onions in 3 tablespoons of butter until golden. Remove from pan and mix with the crabmeat, breadcrumbs, parsley, thyme and cream. Sprinkle fillets lightly with salt and pepper. Make a sandwich with the 2 fillets and spread mixture evenly in centre. Place in greased baking dish. Mix wine into melted butter, and pour over fish. Bake for 25 - 30 mins. at 400 degrees fahrenheit, basting at 5 min. intervals and checking that the flounder does not overcook

Savoury Grilled Halibut
           Ingredients

2 cloves garlic ( minced)
salt (to taste)
black pepper (to taste)
2 oz. chopped parsley
juice of 1 lemon
4oz. olive oil
1 soupspoon soy sauce
4 halibut steaks

 

Cooking

Pre-heat grill
Place garlic, half of lemon juice, soy sauce, olive oil, salt&pepper in a bowl and mix well.
Brush fish with mixture, place on heated grill pan
and grill for four to five minutes, brushing often.
Turn fish, brush again with mixture and grill for another four to five minutes or until bone comes out easily. Place fish on serving plate, sprinkle with remaining lemon juice, and top with parsley.

Creamed fresh Haddock
           Ingredients

1 pound fresh haddock fillets
salt (to taste)
black pepper (to taste)
2 oz. chopped parsley
4 oz. melted butter
4 oz. white flour
4 oz. minced onion
8 oz single cream
1/2 teaspoon mustard powder
pinch of paprika

 

Cooking

Pre-heat oven to 350 F
Dip fish in melted butter and dredge it in the flour until evenly coated.
Arrange fish in a single lair in shallow baking dish.
Sprinkle with onion, salt & pepper.
Cover with cream and bake for 20 - 25 minutes
or until fish flakes easily, basting frequently with
juices from dish.
Place fish only on serving dish and keep warm.
Stir mustard powder into juices left in dish.
Pour mixture over fish and sprinkle with paprika and chopped parsley.
