| Cajun Style Sea Bass or Cod |

Ingredients 4 thick cod or bass steaks |
Cooking
Combine the oregano, spices and olive oil in a bowl, then coat the fish steaks by rubbing over with the mixture. Heat a large frying pan over high heat for 2 mins. Pan fry for 3 mins. on each side. If the fish looks opaque along the cut edge it's ready. If not cook for a few seconds more until it is opaque . |
| Crab Stuffed Flounder | |

Ingredients
5 tablespoons
minced onion |
Cooking
Pan fry onions in 3 tablespoons of butter until golden. Remove from pan and mix with the crabmeat, breadcrumbs, parsley, thyme and cream. Sprinkle fillets lightly with salt and pepper. Make a sandwich with the 2 fillets and spread mixture evenly in centre. Place in greased baking dish. Mix wine into melted butter, and pour over fish. Bake for 25 - 30 mins. at 400 degrees fahrenheit, basting at 5 min. intervals and checking that the flounder does not overcook |
